Opened this with grilled octopus and it was perfect, that cool minerality balanced the char beautifully. The acidity kept things refreshing without making it feel sharp, so we finished the bottle way too fast. Definitely grabbing another for the next seafood night.

The minerality in this Assyrtiko is exactly what I was hoping for—it gives the wine a crisp, clean finish without being too sharp. It paired perfectly with a light seafood dinner and stayed refreshing from the first sip to the last. Definitely a great find for an easy-drinking white with character.
