MAYTAG BLUE (LB)

The bloomy rind gives it this creamy edge that balances the sharper bite underneath. I crumbled some over a steak and it held its shape without turning into a puddle.

The blue veining really comes through after a few minutes at room temperature — earthy and sharp but the rind keeps it creamy. I've never had a cheese that balances that much funk with such a delicate texture. Cave-ripening clearly does something special.
