I was surprised how well the vermouth soak softens the crunch without making them soggy—perfect for topping a quick cheese board. These little onions add a nice sweet bite to my martinis, too.

Grabbed a jar for my Gibson recipe and now I can’t imagine making them any other way—that French vermouth soak gives such a mellow sweetness. Even snacking a few straight from the jar is dangerously easy, and they’re still crunchy enough to hold their own as a quick appetizer.

I’ve been using these vermouth-soaked onions in my Gibsons and they add just the right amount of sweet crunch without being overpowering. They also make a surprisingly good quick appetizer straight out of the jar when I’m short on time.
