For a non-vintage bubbly, this one feels remarkably crisp and layered—that blend of Macabeo and Xarel-lo really comes through with a clean finish. I served it with tapas and it cut through the salt beautifully, no sharpness at all. Definitely picking up another bottle for the holidays.

The apple and citrus notes from that Macabeo and Xarel-lo blend really come through, making it feel crisper than most cava I've tried. It's a touch pricier than my usual pick, but the delicate fizz and clean finish make it worth it for special nights.
