I was surprised by how smooth it is straight from the bottle — perfect for dipping bread. It also makes a clean, light dressing that doesn't overpower my salads.

This is my third bottle — the peppery finish hits just right when I drink a little straight. It’s silky enough for dipping but sturdy enough for sautéing.

Tried it in a simple salad dressing and the difference from my usual stuff was immediately noticeable—the peppery finish really comes through. The Koroneiki olives give it a smooth, almost buttery mouthfeel that works perfectly for dipping bread. My only regret is not buying a bigger bottle.
