캐셀 블루는 반연질 블루 치즈로, 우유로 만듭니다. 아일랜드 최초의 농장 직영 블루 치즈라는 점에서 독특합니다. 아일랜드 티퍼레리 주 캐셀 근처에 있는 제인 그럽과 루이스 그럽의 낙농장에서 전량 생산됩니다. 일부 우유는 구매하지만, 대부분의 우유는 농장의 순종 프리지안 젖소 떼에서 나옵니다. 이 치즈는 저온 살균된 전유로 만들어집니다.
