Our Blue Wisconsin is piquant, full, earthy and intense flavor. It has a firm, crumbly texture with blue mold in veins and pockets. We use it for everything, to crumble in vegetable, pasta, and even fruit salads! We melt it on grilled meat; blend for spreads, dressings, and dips. We like to serve it by itself or with juicy pears, apples, walnuts, cashews, and almonds. Pour a glass of Pinot Noir or Burgundy; Port or Late Harvest Riesling.

Owen ★★★★★

I've been tossing this into roasted vegetable salads and the earthy, piquant flavor really stands out without being overwhelming. The way it crumbles so easily over pasta is a game changer for me.

Richard ★★★★★

The crumbly texture is perfect for folding into a warm pasta dish—it melts just enough without disappearing. The blue veins give it that sharp, earthy punch I keep craving on roasted vegetables.

Owen ★★★★★

That earthy, piquant bite is exactly what my pasta salads have been missing—the crumbly texture holds up perfectly without turning to mush. I’ve even tossed it over roasted veggies and it stole the show. Definitely my new go-to for adding some serious depth.
