Category: ALE

This abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel's share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes. 12% ABV; 19 IBU's

Steven ★★★★★

I cracked one open last night and the cherry note from compensating the angel's share is subtle but really balances the heat from the bourbon barrels. The three-year aging in oak comes through smooth, not harsh at all.

Jason W. ★★★★★

The three-year barrel aging really comes through in this one—deep vanilla and oak notes without being boozy. The cherries balance the bourbon sweetness perfectly. Definitely worth the price for a special occasion.

Stella H. ★★★★★

Poured this one next to a standard quad and the cherry note from the barrel finishing is unmistakable—adds a nice tart edge that balances the sweetness. The three-year aging in bourbon barrels gives it a smooth, almost creamy mouthfeel you don't get from younger beers.
