Kasseri Champignon makes delicious Cambozola in Bavaria. A soft ripened cheese that is nice and creamy with bites of blue throughout. The rind is bloomy and white, the paste soft and creamy with flecks of blue. It is not a brie and it is not a blue. Cambozola has a flavor that sets itself in a league of its own. It is a nice way to introduce someone to blue style cheeses because the flavor is mild and not overwhelming

Charlotte ★★★★★

The blue veining is nicely distributed so every bite has that tangy kick, and the creamy texture melts beautifully on the tongue. I've been spreading it on crusty bread for a quick snack and it's dangerously good.

Thomas ★★★★★

The texture is just perfect—soft and creamy with those little blue veins adding just the right amount of bite. I spread some on crusty bread and it melted beautifully without getting greasy.

Ella ★★★★★

I've been buying triple-cream blues for years and this one has the perfect balance—creamy and mild with just enough blue bite to keep it interesting. The rind is delicate and the paste melts on the tongue.
