Cashel Blue is a semi-soft blue cows’ milk cheese. It is unique, as it is Ireland’s first farmhouse blue cheese. It is all made on the dairy farm of Jane and Louis Grubb nr Cashel in Co. Tipperary Ireland. While some milk is purchased, the majority of the milk comes from the pedigree Friesian dairy herd on the farm. The cheese is made from pasteurised whole milk.

Madison V. ★★★★★

I’ve never had an Irish blue cheese before, but this one’s semi-soft texture is perfect for crumbling over salads. The flavor is pleasantly tangy without being too sharp.

James Q. ★★★★★

Creamy and rich without being overpowering, the semi-soft texture melts beautifully on a cracker. I loved how the blue veins stayed subtle but gave it that distinct Irish farmhouse character. Perfect for a cheese board with some apple slices.

Hannah O. ★★★★★

I was looking for a cheese with real character and this Irish farmhouse blue delivers—the creamy, almost crumbly texture pairs perfectly with a crisp apple. It’s not overpowering, just a gentle tang that lingers.
