ドメーヌ・デュジャック モレ・サン・ドニ ブラン 2014年 ブルゴーニュ（有機栽培）

Opened this with lobster and sweetbreads as suggested, and the stony minerality cut through the richness perfectly. The texture is surprisingly dense for a white Burgundy, really holding its own against the food. Already planning to grab another bottle.

The bright apple and pear notes came through exactly as described, and that stony edge gave it a lift that kept it from feeling heavy with the sweetbreads. It’s got the density to handle rich food but stays fresh till the last glass, which is what I hoped for from an organic Burgundy.

The texture surprised me — it's rich and dense enough to actually hold its own against lobster, which I didn't expect from a white Burgundy. The bright apple and pear notes balance that weight perfectly, and the stony finish lingers just long enough to make you reach for another glass.
