JACQUART BLANC DE BLANCS 2015, Champagne

That crisp pear and yellow apple really comes through on the palate, and for a 2015 it still has such a lively, rich finish. I served it with a simple seafood pasta and it was a perfect match.

I was a little worried it might be too mature, but the crisp pear and white peach on the palate really balance it out perfectly. The richness and vitality together make this such a satisfying glass.

That nose is beautifully evolved but the palate stays so lively—crisp pear and that savory touch really carry through. We let it breathe about twenty minutes and the white peach came out even more. Definitely worth the cellaring time.
