SOPRESSATA (LB)

The slow aging really makes a difference — the meat is tender and the flavor subtle but complex. Perfect on a crusty baguette with some cheese.

The fennel comes through so clearly without overpowering the garlic, which is a balance I rarely find in salame. I sliced it thin with some crusty bread and it disappeared fast.

The fennel and garlic come through nicely without either one taking over, and the texture slices clean. Only reason it's not five stars is the casing is a bit tough to peel at the end. Good on a cheese board.
