The flavor really evolves as it sits out—that savory warmth turns into a rich, fruity finish that lingers nicely. I already sliced half the wedge for snacking and it melts beautifully over roasted vegetables.

The nutty, dried-fruit tang really comes through in every bite, and the texture is firm yet supple. Sliced it thin for a sandwich and it disappeared in minutes—my kids kept asking for more.

I was surprised how creamy it melted for a fondue, even better than the standard Swiss varieties I’ve tried. The rind had a nice earthy smell that complemented the fruity, tangy paste perfectly.
