Took a chance on this for a Spanish tapas night and the snap of the casing when you slice it is exactly right. The paprika really comes through without being overpowering.

The garlic and paprika balance is spot-on, and the cure gives it a firm, sliceable texture that crisps up beautifully in a hot pan. I've been adding it to eggs and lentil stews all week, and it's become a pantry staple.

That smoky paprika flavor really comes through in this chorizo, and the garlic gives it just the right kick. I sliced it up for a quick tapas plate and it was gone in minutes. Exactly what I wanted for a spicy, authentic Spanish sausage.
