The texture is exactly what you want from an alpine-style cheese—firm enough to slice thinly but it melts creamy on the tongue with that nutty, grassy finish. I've been sneaking a piece every time I open the fridge, and it's dangerously good on a simple cracker.

I sliced into this for a cheese board and the creamy, nutty flavor was even better than I expected—it melts beautifully on a cracker. The texture is firm yet buttery, and you can really taste the care in how it's made. Definitely ordering another wedge soon.

The rind on this cheese has a lovely earthy aroma, and it melts beautifully on a grilled cheese sandwich. I've already gone through half the wedge in just two days.
