GORGONZOLA (VERDE DOLCE) (LB)

I opened the wedge expecting a crumbly blue, but the pale paste practically spread itself on my cracker, and those greenish-blue veins pack just enough punch without being harsh. The powdery patches on the rind didn’t bother me at all—they’re just part of its character.

The creamy paste is so much softer than I expected, with those greenish-blue veins adding a nice mild tang. It spreads beautifully on crusty bread without crumbling.

That buttery texture and the way the greenish-blue veins spread through the pale paste is just perfect. It's much creamier than Stilton, spreads beautifully on a cracker.
